Chatica Quinua Blanca - In English 'White Quinoa' has grown in the Peruvian Andes, Ecuador, Bollivia, Chile and Colombia, as well as at sea level in the south-central Chile, from about 5000 years ago.
When cooked they adopt a nut-like flavour. The ground quinoa can be used for making different types of breads, cakes and cookies because it improves dough characteristics, making it more resistant, which promotes good water absorption, often replacing wheat flour and its derivatives.
One of Peru's typical dishes from Cusco area is fished or 'Peské', which is prepared with milk, cheese and quinoa and can be combined with fried egg and even a piece of steak meat; also it used increasingly for filling empanadas.
